My TeaChef Tea arrived
This month it is Chestnut Tea and I decided to combine it with the Cranberry Tea.
Here is the resulting recipe
Cornish Game Hens with Cranberry Chestnut Stuffing
I Bag of Stuffing cubes
1 Can Mandarin Oranges
1 can Chestnuts (unless you can get ½ cup roasted ones J)
1 cup fresh cranberries
½ cup of Celery
1 stick ( ½ cup) butter
1 TBSP Herbes de Provence
1 tsp cinnamon
1 cup double strength tea using both Chestnut and Cranberry teas (include leaves)
Mix everything together and stuff your hens.
Hens should be seasoned with salt, poultry seasoning and pepper before stuffing and a sprig if fresh thyme under the skins with a pat of butter
Bake at 350 for 1 ½ to two hours
Baste with a mixture of Mandarin juice from two fresh Mandarins and two tablespoons Honey the last ten minutes
