Tea Chef Tea for Sept.

I had my recipe all ready to send and saw that some one else had the same Idea for the Genmai Cha tea for this month. It makes the best sesame brittle!

I love sesame candy and with the popped rice in this tea, it creates a sweet treat.

Sesteame Brittle

2 cups sugar
1 cup light corn syrup
1/4 cup butter (not margarine)
1/2 cup water
1 cup toasted sesame seeds
3 TBSP Genmai Cha Tea

butter two baking sheets and set aside. Butter sides of a heavy 3 quart sauce pan. In sauce pan combine sugar, corn syrup, butter, and 1/2 of water. cook and stir (stirring is very important) over a medium flame. to boil clip themometer to pan stir over medium low heat to soft crack stage 275 about 30 minutes than add seeds and tea and stir tilhard crack stage 295 about 15-20 more minutes. remove from heat remove themometer.
QUICKLY sprinkle in baking soda over mixture stirring constantly. IMMEDIATELY pour into prepared baking sheets Cool and break into pieces. Store in tightly covered containers. IF there is any left over to store.
